100% Whole Wheat Bread


This bread is delicious! It is easy, soft, moist, and fluffy. I've been asked by a few people for the recipe, so I am finally getting it up! My mother-in-law has been making it for years, and she was kind enough to pass the recipe down to me! I use my BOSCH mixer to make this bread. If you have an electric mixer similar, I would suggest using it... otherwise it might not be as easy with the kneading time.

I also like to change up the recipe every once in a while; sometimes i'll add ground flax, quinoa, oats, and other grains. So experiment and have fun!

One thing before you get started :) The dough enhancer and gluten IS optional. I sometimes use it, and I sometimes leave it out. It does make the bread slightly fluffier. If you leave it out, just add a little extra wheat flour. Good luck!


Whole Wheat Bread (3 loaves)

Mix on Speed 2 (medium) for 2 minutes:

3 cups warm/hot water
1/3 cup oil
1/3 cup honey
1 tbsp. instant yeast

Add:

1 tbsp. dough enhancer
1 tbsp. salt
1/3 cup gluten
1 cup whole wheat flour (I've found that clean winter white wheat is great!)

Blend:

Add slowly 4 1/2 cup whole wheat flour until side of bowl is clean. You may need a little more/less. (I grind my wheat flour on one of the finest settings; it will give the bread a smoother texture.)

Knead/mix: on speed 1-2 (low or medium) for 8 minutes.

Shape: Spray pans with Pam. Shape dough into loaf and set in pans. Let rise until double (approx 50-60 min)

Bake: at 350 for 20-25 minutes (golden brown)
