This is a pretty easy meal that I grew up on. It's full of flavor and makes you feel like you are in Mexico... maybe not, but it has rice and beans?
Southwestern Mexican Chicken and Rice
4 Boneless chicken breasts
1 cup salsa (thick)
1 pkg taco seasoning
2 cups water
2 cups minute white rice (I like to use brown rice, I just cook it before hand)
1 cup black beans
1 cup cheddar cheese
Place chicken, salsa, taco seasoning, water in a large deep sauce pan. Bring to a boil and cook until chicken is almost done. Simmer and cover for 10 minutes. Return to a boil and then stir in rice and beans. Sprinkle with cheese and cover and cook 5 more minutes. Serve!
*Top with sour cream optional
