Have a few zucchini's you need to get rid of? This is a great recipe! And... the best part for kids is that they won't even taste the zucchini! I guess the sugar might cancel out the nutritional value of the zucchini, but it's a nice thought that you are eating a vegetable!

Double Chocolate Zucchini Bread
Adapted from Food.com Prep time: 25 min Total time: 1 1/2 hours
3 eggs
1 c vegetable oil
1 1/2 c sugar
1 tbs vanilla extract
2 cups zucchini, washed and shredded (about 1 medium)
1 cup wheat flour
1 1/2 cup all-purpose flour
1/2-3/4 cup cocoa (depending on how chocolaty you want it--we always use more)
1 tsp salt
1 tsp baking soda
1/4 tsp baking powder
1/2 tsp cinnamon
1/4-1/2 cup semi-sweet chocolate chips *optional
In medium bowl, combine dry ingredients (including chocolate chips). In another large mixing bowl, beat eggs, oil, sugar and vanilla. Stir zucchini into creamed mixture. Add the dry ingredients to large bowl (zucchini mixture) and mix well. Pour into two greased and floured bread pans (8x4x3-inch loaf pans).
Bake at 350*F for 1 hour or until bread tests done.
