Banana Bread

I made this recipe freshman year. I was trying to make it slightly more healthy than regular banana bread, but it didn't really work! It is delicious though and i'm sure you could substitute apple sauce for the margarine and it would still taste great!

Banana Bread

3 Really Ripe Bananas (Mashed)
2 eggs
1 tsp Baking Soda
1 tsp Baking Powder
1/2 tsp Salt

3 2/3 Cup Wheat Flour
1/3 cup White Sugar
1 cup Brown Sugar
2/3 Cup Margarine or Butter

1/3 Cup Milk
8 oz. Sour Cream
1 tsp Vanilla
1/2 tsp Cinnamon


Chocolate Chips and Nuts Optional

Heat oven to 325*F. In small bowl, mash the bananas and then beat in eggs. In medium sized bowl sift together flour, salt, baking powder, and baking soda. Set aside. In large bowl cream butter and sugars. Mix in the banana/egg mixture, sour cream, vanilla, and cinnamon with creamed mixture. Add sifted mixture until just combined. Stir in milk (If you decide to add chocolate chips or nuts, add at this time.)

Pour mixture into two greased bread pans and bake about an hour or until the top is slightly browned.

*You can also make these into muffins. Make sure to watch them because they do not need to cook as long!

Better Directions:

Cream butter and sugars in large bowl, then beat in bananas and add eggs.Add sour cream, vanilla and cinnamon. In separate medium bowl mix together dry ingredients. if adding chocolate chips, stir them into the flour mixture to coat. add to banana mixture until just combined. stir in milk.
